Dutch baby


My girls have been asking for pancakes recently so I thought the perfect time to try making a dutch baby. I had all the ingredients on hand and it seemed simple enough (which it was!) It turned out great - a cross between a giant pancake and popover. (and I love popovers!) It was super simple to make and the best part, only one pan to clean up. I will definitely be making again and going to try a savory one too. How good would it be with cheese and fresh herbs... yum! Try this recipe for your next weekend breakfast and top with powder sugar and any kind of fruit.


Ingredients:

3 eggs

3/4 cup milk

3/4 cup all purpose flour

1/4 cup sugar

1 teaspoon pure vanilla extract

pinch of salt

2 tablespoons butter, for heating

powdered sugar, for serving

fruit of choice, for serving


How to:

Preheat oven to 425 degrees. Put a cast iron skillet in the oven and heat for 5 minutes. In the meantime put all ingredients except the butter in a blender and blend for one minute. Take the cast iron out of the oven (careful it will be hot!) and melt the 2 tablespoons of butter in the pan. Add in all the mix from the blender and put in the middle rack of the oven. Set timer for 20 minutes and whatever you do - DO NOT open the oven until its done or it will deflate. After 20 minutes take out, sprinkle with powdered sugar and fruit and enjoy!
